
Vineyards located at Aguarón, the most renowned wine region in the Cariñena D.O. It is the highest region in altitude together with the Villanueva de Huerva region, between 600 and up to 850 meters in the Algairén mountains facing north.
The soil is franc, stony and clay. There is a useful layer of 90cm with 40cm of stones and gravel until the clay layer is reached at 90 cm. In late October day temperature can reach 30 ºC and at night dropping down to 2-4 º C. A perfect thermal variation for a slow ripening that results in grapes with great concentration in fruit and colour.
100% of Garnacha and Cariñena vines are handpicked from short bush vines on unirrigated land that barely receive any treatment due to the 7 months of Cierzo wind which constantly hit this region. The average age of our Garnacha and Cariñena vines are 40 years old.
Grapes were handpicked in the end of October from our bush vines during the early morning hours to arrive fresh at the winery. They were then cold-macerated prior the fermentation for 96 hours at 6 ºC, also known as "cold soak" in order to extract colours, fruitiness and flavours as well as providing a fleshier mouthfeel to the wine. They primary fermentation took place during 8 days in stainless steel tanks under controlled temperature of 26 ºC. Once the fermentation finished the wine stayed "sur- lees "from 15 to 20 days the extract the grapes potential to the utmost. After this stage the wine went through full malolactic barrel fermentation and was later aged 5 months in new French oak barrel of 225 liters.
We prepared the final "coupage" and decided not to stabilize the wine and applied a very gentle filtering.
